Hygienic importance and procedures of Staphylococcus aureus isolation from food

Sažetak
Our regulations concerning bacteriological standards for food, limit the coagulase-positive species of Staphylococcus which is considered the most enterotoxic. Such approach does not satisfy not taking into account the findings of coagulase-negative enterotoxic species of Staphylococcus. Enterotoxic Staphylococcus can produce enterotoxines, thus causing alimentary intoxication in humans while findings of other species of Staphylococcus points to the negligence in the hygiene of food production and transportation. That is why the findings of all members of S. aureus species in food should be limited. In such a way our regulations would conform to the trends that are generally accepted throughout the world. The results of scientific research show that there is no unique procedure that would satisfy all the necessary criteria relating to proving and isolating S. aureus in food. However, recent research shows that BP BBL culture medium should be given some advantage in determining the CFU of S. aureus in food.
