The mycotoxins from edam-cheese and their toxicity

Abstract

All the samples of Edam, cheese collected from the market were contaminated by moulds. A great number of moulds from these samples were isolated. The moulds were classified into 6 genus and 19 species. Aflatoxin B1 was not detected in cheese samples, while ochratoxin A was found in two samples at the concentration level from 820 to 1100 μg/kg. All the exstracts of contaminated cheese were toxic for chicken embryons. During the first test day the letal effect on embryons was shown by 40 % of total number of extracts. Only 9,33 % of embryons survived the treatment.
