Some chemical parameters of kefir production by use of different starter composition

Sažetak

The composition of starter is important factor which regulate the character of the biochemical process. We have examined three sorts of kefir. For the kefir I we have used the pure culture of the kefir grains, for the kefir II the pure culture of the kefir grains and the pure culture of bacteria Str. cremoris and Str. diacetilactis, and for kefir III the pure culture of the kefir grains and the pure culture of bacteria Str. lactis, Str. cremoris, Str. diacetilactis and Str. filant. The parallel examinations of kefir I, II and III show that there are not the substantial difference in the degree of acid, size of pH, contents of milky acid and carbon dioxid. The diferences are not significant.
