Sažetak

The aim of the work on the problem of UHT milk has been to find out the sources of unsterility when it appears. At this work all procedures and methods, which proved to be faster and more efficient, have been applied. This crticle deals with a concrete case of unsterility and the applied organoleptic, chemical, microbiological and technical methods are described. The conception and plan have been worked out in details in advance. The experiments are carried out on the basis of the results previously obtained. The source of unsterility was a leakage in the cooler where product is cooled with chilled water.
