Sažetak

The vitalac of the island of Brač was added to the List of intangible cultural heritage by the Croatian Ministry of Culture in 2007. By January 2014 a total of 131 items have been enlisted, among which there are 15 items related to food products, i.e. preparation and production of Croatian traditional dishes. The island of Brač is represented with even two items on the List: the hrapoćuša cake and the vitalac. The latter is an ancient meat dish originating from this very island. It is made from pieces of suckling lambs’ or young goats’ offal (liver, heart, lungs, spleen) that are skewered and wrapped up in abdominal membrane of the animal. It is finally all wound in small intestine and then roasted over live coals.
