Bacteriological correctness of salted pig guts on market places in Zagreb

Sažetak

Study results of microbiological examination of salted pig guts are presented. Total microbial count was 4.18 ±1.32 log10cfu/g to 7.0±0.67 log10cfu/g. Salmonella spp., L. monocytogenes, E. coli and S. aureus were not determined. C. perfingens was isolated in 3 samples (1.5%). Yeasts were determined in 13 samples of salted pig guts.
