Sažetak

Chemical composition and nutritive value of mare's milk are well known in human diet as well as its possibilities for use in cosmetic and pharmaceutical industry. The most important quality of mare's milk is the low lactic fat content of and extremely high level of polyunsaturated fatty acids (even 28%) from which omega-6 and omega-3 fatty acids are synthesized, whose value is irreplaceable for humans. Mare's milk has a positive effect on human diet because the high level of whey proteins provide the body with essential amino acids. Mare’s milk is best effective when used fresh without previous processing. It contains less casein than albumin and globulin which makes it easily digestible and can be reabsorbed into the blood. The capacity of mare’s udder is only 60 ml. Yet, a mare produces on average from 15 to 20 l of milk daily during 358 days of lactation, and champion mares produced 28 l of milk daily. The daily milk yield according to the mare’s body weight amounts to 2-3.5 kg per 100 kg of live weight. Milk powder is mixed with hot water and can be immediately consumed. Koumiss is produced from fresh milk by fermentation which is based on the combination of alcohol and lactic
acid. The possibilities for using mare’s milk are numerous, but they are hardly used in Croatia now. The reasons are that people are not informed and educated about mare’s milk, lower standards of living and mare’s milk is not widely known, although a certain increase in interest can be noticed.
