Abstract

Probiotics can be defined as viable mono- or mixed culture of microorganisms which, applied to animal or man, beneficially affects the host by improving the properties of the indigenous microflora. The scientific basis for the development of probiotics stems from the knowledge that the gut flora is involved in protecting the host (man or animals) against colonisation of the intestinal tract by nonindigenous microorganisms. The probiotic effect of Lactic acid bacteria may be expressed by different modes of action towards pathogenic microorganisms in intestinal tract: I. Suppression of viable count by; a) production of antibacterial compounds (bacteriocins), b) competition for nutrients, c) competition for adhesion sites on the gut epithelial surface; 2. Alteration of microbial metabolism: a) increased enzyme activity, b) decreased enzyme activity and 3. Stimulation of immunity by increased: a) antibody levels, b) macrophage activity.
