Abstract

Quality of 280 samples of milk and dairy products from the Zagreb market was determined on the basis of organoleptic characteristics, chemical composition, technologic procedures and microbiological correctness. Analysis data showed a relatively low quality as 42.86% samples of milk and dairy products did not satisfy minimal requirements of the existing regulations. Due to the reasons mentioned above, it is necessary to improve existing control conditions relative to production and to improve procedures ensuring hygiene in production and satisfying sanitation in dairy plants.
