Abstract

For the first time in our history, the Republic of Croatia will pass a law about the quality of milk and dairy products. All former legislations in ex-Yugoslavia were brought by Federal Committee for Agriculture on the basis of "existing field situation" with a bit stricter main intention not to deteriorate the existing situation. Interests and standpoints of "western and eastern" republics of ex-Yugoslavia were always confronted. For a long time we knew that legislation about quality of milk and dairy products needs to be more severe but we respected the fact that we should not drastically influence decrease of milk flow into dairy. For the same reason we take into consideration a non-satisfactory situation on the farms of a large number of producers. It was a great problem for laboratories to control all the producers. Now we are in the position to pass stricter law, according to European Countries, considering only the following criteria: safety, nutrition, quality and shelf life. New legislation should comprise two main areas: chemistry and microbiology. Chemical quality of milk and dairy products is influenced by breed, feeding, type of housing. While, microbiological quality of milk and dairy products depends on manipulation of milk after milking; the factor strongly influenced by man. Determination of microbiological quality is the basis for the estimation of whole milk processing in dairies. In this field a lot can be done by education of milk producers. Microbiological quality of milk, as in many European countries should take part in pricing system
