A study of cream line, number and size of fat globules in milk

Abstract

During the period from 1966 to 1967, the cream line, number and size of fat globules and fat content in milk taken from 29 cows of Frisian type of cattle were investigated. 600 mixtures of morning and evening milk taken from FOD Butmir were analysed. Mean value of cream line in the examined milk after 24 hours was 7,7051 per cent, while cream line index 2,24, after staying for 48 hours the mean value of cream line was 8,1905 per cent and index was 2,38. Fat content in milk amounted 3,4386 per cent on the average and ranged from 1,0 to 6,9 per cent in separate samples. Standard deviation amounted 0,311 while coefficient of variation was 9,045 per cent. Average number of fat globules ranged from 412.500 to 3,675.000 per 1 mm'' in separate samples while average number for all examined samples amounted 1,585.665 fat globules. Standard deviation amounted 18,759 while coefficient of variation 14,788 per cent. Average size of fat globules in all examined samples of milk amounted 3,1198 microns. Absolute size of measured fat globules ranged from 1 to 22 microns. Standard deviation was 0,211 while coefficient of variation 6,763 per cent.
