Cultivation of pure culture of Bifidobacterium bifidum in various nutrient media

Abstract

Consumer's interest in sour milk products containing bifido bacteria is primarily due to their favourable effect on health. In production of fermented milk beverages containing Bifidobacterium bifidum, bacterial culture should be grown in a convenient nutrient medium in order to obtain a culture of good technological properties. The present study is relative to growth of B. bifidum in various nutrient media. A comparison of cell counts or colony-forming units (cfu/ml in each of the media during the first oculation (liofilized culture) and five subsequent re-inoculations showed the highest cell counts/ml in natural medium, evaluated as the most favourable one. During the cultivation in various media, morphological changes of B. bifidum were closely observed; experimental results confirmed the data (Rašić and Kurman, 1978) on the proneness of this Bacterium to morphological changes in the course of cultivation.
