Kinetics of Bifidobacterium bifidum growth in retentates of milk and demineralized whey

Abstract

Milk retentate condensed to 1/3 of its original volume and 50:50 mixture of milk and demineralized whey retentates were used for B. bifidum cultivation. Growth and activity of B. bifidum culture were observed by determining kinetic criteria: growth rate (dN/dt) and lactic acid formation rate (dp/dt). According to results skim milk retentate containing more proteins stimulated growth of B. bifidum, and addition of whey retentate to milk retentate resulted in better growth of B. bifidum and shorter fermentation lenght of time.
