The influence of the sanitizing procedure on the milk quality

Abstract
Taking into consideration that in spite of notable results, reached in improving of raw material's quality, our milk industry still receives milk of poor bacteriologic quality, the authors have set a goal for themselves, generally to establish immediate situation of hygienic conditions in milk production and to realize the possibilities for theirs improvement. The investigations were performed by: following milk quality in existing conditions and after several months lasting application of newly introduced cleansing procedure. The received results confirm the exsisting knowledge about rapid decrement of origin number of microorganisms in milk after correct application of cleansing by appropriate remedies. The index number of milk quality improvement, in other words, decrement of number of bacteries in milk, was ranging from 3.77 to 44.70 times, dependent on contamination in different production conditions. Variations in effect of application of cleansing procedure are result of human factor, because the experiments were realized not under direct control, but under normal production conditions.
