Solid not fat as criterion of milk quality

Abstract

A summary of the actual problems concerning SNF has been presented and two questions in this field have been shortly considered: 1) is the minimum standard value of 8.5 % SNF too severe and 2) does the Fleischmann's formula give correct values for SNF. On the basis of our results and those of some other authors we remained in the opinion that 8.5 % SNF is not too high and that the theory of SNF steady decrease during the last 60 years is false. There is some evidence that Fleischmann's formula gives 0.2-0.4 % higher results for SNF than the gravimetric method. This suggests that some changes in the interrelationship between constituents of the SNF have happened but there is no proof for it at the moment. We proposed extensive and systematic investigations of the problem of SNF under strictly controlled conditions.
