Intracellular protein profiles as additional criterion for the selection of starter strains

Abstract

A simple method, based upon the separation of cellular proteins by poliacrylamid gel electroforesis, has been devised for distinguishing between 3 strains of lactic streptococci and one strain of micrococci. Since gel electroforesis permits analysis of all cell comparatments by scanning protein content, more similarities in protein profiles among the strains suggest a similarity in genotype. This method does not supplant other techniques, but it should be of value in selecting strains for cheese starters.
