Abstract

The goal of this research was to determine the eYect of sex, slaughter weight and production season to pH value, color, drip loss and
basic chemical composition of the meat of Lika Pramenka lambs. The lambs of Lika Pramenka were raised on a family farm in Lika-
-Senj County during the years of 2010 and 2011. The chosen lambs were equally represented by sex and slaughtered at the age of 5
months. Statistically signi>cant diYerences between ram and ewe lambs of Lika Pramenka were determined only in drip loss (p<0.05)
whose signi>cantly higher values were determined in muscle tissue of ram lambs. The increase in body weight at slaughter signi>-
cantly in6uenced (p<0.05) only the a* value of color indicators of lamb meat. The production season had a statistically signi>cant
in6uence (p<0.05) to L*, a* and b* values of color indicators of lamb meat.
