THE STORAGE AND THE CONTAMINATION OF FLOUR IN YUGOSLAVIA

Abstract

During past a few years we have introduced in Yougoslavia the new varieties of grain and our production of wheat was in 1959. about 400.000 waggons. But we have not yet adequate capacities of storage grain's it magazine. And because of that exists the possibility to contaminate of grain with the insects, rodent pellet and excreta, and insect fragments, mites- Tyroglyphus farinae, and other contamination. Our silos and magazines for grain are not modern with all what they need for modern storage of wheat. So, it exist the possibility the enormous contamination with filth and other extraneous material. The wheat enters in our mills with filth and so it contaminates the mills and magazine of flour. Over that the sacks we use many times and so they are the potential source of contamination of flour. We have investigated the filth in the flour of many varieties (types) of flour in Yugoslavia and we have found in: white flour 216,5 pieces of filth; ( type ››600‹‹ 286,0; type ››1000‹‹ (from the magazine of army) only 130,2; type ››1.100‹‹ and ››1.200‹‹ 209,6 pieces of filth. In this quantity we are count: Tyroglyphus farinae, insects and they fragments, rodent pellet and excreta and other contamination. For investigation of filth we have used the method of acid decomposition of starch with HCl and the paraffinum lyquidum. About 82% of all filth they are the insects: Ephestia Kühniella, Calandra granaria and C. oryzae, Rhizopertha dominica, Tribolium sp., Tenebroides mauritanicus and Tyroglyphus farinae (Acarus siro). We have found more the contamination in flour which have produce during the summer's months. We have investigated the influence of the contamination on the acidity of flour, too.
