Abstract

The objective of the paper is to list, as well as etymologically and lexicologically
analyse lexemes describing cooked, i.e. thermally processed food in the Fiuman idiom.
Since local culture and tradition are reflected in the culinary art, and language is the
reflection of extra-linguistic reality, the hypothesis is that the material studied includes
all language layers that have been present in Rijeka in the course of history – more precisely
Slavic, German, Hungarian and Roman ones. The material has been collected by
the means of interviews conducted with native speakers with the help of a questionnaire
prepared in advance.
