Abstract

The Black Slavonian pig is the breed that is mostly grown for the production of dry cured products, and in the research carried out so far, the quality of the meat of this breed has been examined the most. In this research, the leanness of Black Slavonian pigs raised in a semi-open housing system was examined, as well as the influence of warm carcass weight on the distribution of the main tissues. We examined 47 carcasses which were classified into three weight groups: <185 kg (N = 16), 195 kg (N = 15) and >205 kg (N = 16) while commercial dissection was used to dissect main tissues: meat, fat and bones. The results of this research showed that with an increase of warm carcass weight, carcass leanness decreases, that is, the profitability of fattening BS pigs above the final recommended weights by the breeding plan is highly questionable.
