Sažetak

Even after harvest, fresh fruits and vegetables continue to lose water and dissolved compounds, as well as exchange gases with the environment. The use of edible coatings after harvest has been found to be a successful sustainable post-harvest treatment for minimizing water loss, preservation of freshness, nutritional quality and sensorial properties, and improving the antibacterial characteristics of coated fruits. The creation of edible coatings is cutting-edge technology aimed at ensuring the safety and quality of products after harvest. This study discusses the features, kinds, and applications of edible coatings for increasing the shelf life of harvested fruits.
