Sažetak

Fat content was determined in 245 samples of milk used for Emmental cheese production in a factory located in Moslavina from July 1969 to March 1970, and total solids content calculated using the Fleischmann formula. Product yield of green Emmental cheese was also determined and its month-to-month differences testified. Mean monthly values with standard deviation and other statistical data are tabulated for fat and total solids contents in milk and also for yield of green Emmental cheese. Ranges for monthly mean fat and total solids contents of milk respectively were: 2.85 % (March) to 2.97 % (September), and 10.75 % (March) to 10.95 % (October). Ranges for monthly mean yield of green cheese were 8.10 % (March) to 8.54 % (December) or 10.45 kg (December) to 13.08 kg (March) of milk used for the production of one kilogram of green cheese. Month-to-month differences in yield for green Emmental cheese were statistically significant in 50 % (P<0.01), and approximately 70 % (P<0.05) cases.
