THE MARKET FOR MILK AND MILK PRODUCTS IN THE SOUTH – WESTERN BOSNIA

Sažetak

There is a growing demand for milk and dairy products. Into this paper I wanted in several segments to research trends in manufacture and consumption, as well as consumer preferences, in order to get some information for the future market development. In the Chapter on the Milk Manufacture and preparation, the following fields were researched: manufacture, trends, and manufacture capacity, repurchase analysis, specification of the main processors and their manufacturing program. In the monitoring time of 5 years, the entire milk manufacture grew from 11 447, 00 to 19 267, 00 liters. The milk manufacture per cow also grew. In the year 2005 this manufacture grew by 40% in relation to the year 2001, and it was 1866 liters. The sale in the researched area was 60% of the manufactured milk, and at the same time in FBiH (BiH Federation) about 25%. This indicates a well organized milk sale. There are some positive trends in the milk manufacture field, which effects the higher level of the exploatition of domestic dairies, as well as the product quality from its assortments. Considering the processoring capacities for the near future, there is a significant growth of the explooatation use level, the manufacture is mostly oriented to the long-life products and to the export, which is a positive side of the milk and dairy market. On the basis of the survey, we get to the conclusions that there are ideal circumstances for the expanding of the assortments (fermenting products like yogurt, sour milk etc.) In the Chapter on Consumer Preferences the tele phone – survey was used and l60 persons were selected by the method of chance sampling. The survey was in two parts. The first one contained several common demographic questions, and the second one referred to the dairy products consumption. The data were classified into tables and each table was commented separately. The survey gives plenty of data on consumer habits (baying place, motives, consumption, term “domestic product” etc.), which can be used in the future market planning and as the basis for the consumption determination in the research area. In the Chapter Balance, production and consumption were determined on the basis of the relevant researches (statistical data, survey used, the existing strategic documents), the consumption structure was analyzed (domestic producer and importer), the relation of exports and import was researched and it was concluded that there was a certain balance between exports and imports on lyses the suggestions were given to the existing dairies, in order to spread their products assortments and concentrate on quality in primary manufacture (farmer type – market production), as well as providing good quality raw – material for processing in accordance with the European Union principles.
