Abstract
The aim of this paper was to determine the dynamics of lettuce (Lactuca sativa L.) drying at different temperatures and to establish mathematical models that describe these dynamics. Oven drying was carried out at 80 °C and 105 °C, and the mathematical dependencies tested included different polynomial and exponential functions. Experiments confirmed that the fifth-order polynomial mathematically describes best the time dependence of moisture loss from the lettuce leaves at both 80 °C and 105 °C, both for the control samples and for the samples treated with different amounts of plasma activated water. However, it is not possible to determine the un-doubted influence of PAW on the dynamics of moisture loss from lettuce leaves.
