MARKET VALUE OF CARCASSES OF MODERN BROILER GENOTYPES

Sažetak
The research was carried out on two modern broiler hybrids, Cobb 500 and Hub¬bard Classic, which were kept and fattened in equal conditions, and slaughtered at age of 42 days. Average live weight of Cobb 500 broilers was 2055.95 g, and of Hubbard Classic broilers 2066.97 g. Carcasses were processed as „ready to grill“, and divided into three groups according to slaughter weight: 1000-1300 g, 1301-1600 g and 1601- 1900 g. Carcasses were cut into main parts and presented in absolute and relative values. When calculating market value of broiler carcasses, the authors applied Croatian market prices valid in early 2012 (carcass 20.00 HRK/kg, breasts 28.00 HRK/kg, drumsticks with thighs 27.00 HRK/kg, back 10.00 HRK/kg, wings 24.00 HRK/kg, breast fillets 42.00 HRK/kg). It was determined that there were differences in relative portions of main parts of both hybrids with respect to carcass classification into weight groups. Increase in relative share of breasts was proportional to the increase of Cobb broilers’ carcass weight, being from 35.49% to 37.90%, and of Hubbard broilers’ carcass weight, being from 32.43% to 34.77%, while at the same time, relative portion of drumsticks with thighs lowered in Cobb 500 broilers from 30.20% to 29.32%, and in Hubbard Classic broilers from 32.41% to 30.99%. The research indicated that carcasses of Cobb 500 broilers had higher market value than Hubbard Classic broilers, because of higher portions of quality parts in carcass, such as breasts and breast fillet.
