Proteolytic activity of the Streptococcus group N

Sažetak
A selective review is given of the recent findings relating to the proteolytic activity of lactic streptococci. Although the fundamental knowledge in some fields is still lacking, attempts have been made to describe their growth and proteolytic functions in milk and their unquestionable importance for the cheese ripening.
