Quality estimation of blue mould cheese using conductivity determination method

Sažetak
Electric conductivity measurements can be helpfull in estimation of cheese quality during the storage period. Thus the conductivity of blue mould cheese of various production series was determined at the storage temperature oj 281 K (8 °C) during 3 months period. Experimental data of conductivity measurements were in good correlation with organoleptic properties of cheese when estimating its quality.
