The influence of time of application of protective plastic coating on Tamish cheese ripening

Research was carried out with Tarnish cheese plastic coaling. The plastic coating of cheese 2-3 days after the manufacture gave good results, hut plastic coating later than 5 days after manufacture was unsafe from the point of mould protection. During 60 days the cheese ripening process was followed hay laboratory tests of fat, acidity and proteins
