Sažetak

Lactoperoxidase with thiocyanate ions and hydrogen peroxide are contained in the lactoperoxidase - thiocyanate - hydrogen peroxide - labelled system (LPS). For the LPS activity, the adequate equivalent concentration of all three components are necessary. Lactoperoxidase should be supplied from some exogenous source. It is suggested that 0,4 mMol of H2O2 is the necessary concentration for the LPS activation. Prolonged bacteriostasis by the LPS action is dependant on the levels of contamination and at the initial concentration of 10^4 microorg./ml it lasts for 9 hours and at 10^5 and 10^6 microorg./ml for 6 hours. In milk samples with the activated LPS, pH variations are slower, technological correctness of milk, therefore, being prolonged.
