Effect of spray drying of retentate powder quality

Sažetak
The experiments were carried out with the aim, to establish the effect of spray drying on protein quality in UF retentate powders. The changes were found in 5-HMF content during 8 months of storage at 4 °C and 37 °C. No significant changes were found in total proteins and protein fractions.
