Sažetak

The paper presents the results of research on the influence of Ross 308 and Cobb 500 genotypes of male broilers on slaughtering properties and technological indicators of breast muscle tissue. of Fatty acids contents and TBAR S values of muscle tissue were determined on fresh and frozen samples. Breast and thigh meat samples were stored in freezer at -20°C for 30 days. Broilers were fattened in a conventional manner (same conditions for both genotypes). After 35 days of fattening, Ross 308 broiler carcass weighed 1576.85 g, and Cobb 500 broiler carcass weighed 1586.40 g (P>0.05). Significant differences were found for CIE L* and CIE b* color indicators, cooking loss (%) and WBSF (N) values between genotypes (P<0.01). Broiler genotype influenced the palmitic acid content of in breast muscle (P=0.046), while storage period affected the myristic acid content (P<0.001). The interaction of the two examined treatments affected the stearic, heptadecenoic, oleic, linoleic and arachidonic acids content, as well as total SFA and n-6 PUFA (P<0.05). The storage time of muscle tissue and the interaction affected the eicosadienoic, dihomo-γ-linolenic, and α-linolenic acids content, as well as total n-3 PUFA and the ratio of n-6/n-3 PUFA (P<0.05). Analyses of fatty acid content in fresh and frozen thigh muscle tissues confirmed that broiler genotype and the interaction did not have any effect on that nutritive trait. Storage period had significant influence on the linoleic acid content and total n-6 PUFA in thigh muscle tissue (P<0.05). The research on oxidative stability of breast and thigh muscle tissues proved that storage period significantly affected TBAR S values (P<0.01), while the broiler genotype did not have significant influence (P>0.05).
