The influence of the harvest date on the content of volatile compounds in grapes of the ‘Sauvignon blanc’ variety

Sažetak

The aim of this research was to determine the influence of different harvest dates on the composition and content of volatile compounds in grapes of the ‘Sauvignon blanc’ variety, harvested in 2023, in the Plešivica-Okić growing region. Harvesting took place in three different periods, five to seven days apart, and the experiment was set up according to a random block layout with three repetitions of ten vines each. The harvest date affected the basic chemical composition of the grapes in the
form of a continuous increase in the concentration of sugar, malic acid and pH value. On the other hand, the total acids in the grapes decreased towards the third harvest date. It was found that the harvest period had no influence on the content of total aldehydes, volatile phenols, terpenes and higher alcohols. In the third harvest date, there was an increase in the content of esters and C13 norisoprenoids. The content of fatty acids was the highest in the second harvest date.
