Sažetak
The artichoke (Cynara cardunculus var. scolymus (L.) Fiori) is a perennial plant belonging to the family Asteraceae, originating from the Mediterranean region. It is primarily cultivated for its flower heads, which are used for fresh consumption as well as for canning. The artichoke is grown not only for culinary purposes but also for its medicinal properties, as it is an important source of vitamins, minerals, antioxidants, and other bioactive compounds that play a significant role in the prevention and treatment of various diseases. It thrives in moderate climatic conditions with mild winters and warm summers. The number of days with critical temperatures in the Zadar area recorded over several years is negligible, while in certain parts of the Ravni kotari region it can reach up to a week, which may negatively affect young plants. Artichoke can be grown on various soil types, although it prefers deep, fertile, and well-drained soils rich in organic matter, with a slightly acidic to neutral pH. During growth, it is essential to ensure an optimal supply of nutrients, depending on soil type and climatic conditions. The crop can be particularly sensitive to excessive nitrogen levels, which can adversely affect the development of flower heads. Under conditions of high temperatures and low relative humidity common in this area during July and August ensuring an adequate water supply is crucial for achieving high and stable yields. This paper presents the biological characteristics and ecological requirements for artichoke cultivation in the Zadar area, along with the corresponding agrotechnical practices, harvesting, and storage methods.
