Sažetak

Supply as well as demand of minimally processed vegetables (washed, cut, packed) that meets consumers' needs for “quick” and convenient products significantly increased in recent years, due to time constraints regarding food preparation. Fresh-cut vegetables market in Croatia is not very developed yet but has recently been gaining in importance. The goal of this work was to identify existing supply of fresh-cut packed vegetables in supermarkets, and to examine consumers’ purchasing behaviour and their attitudes towards these products in the City of Zagreb. The research results show that supermarkets offer their own brands of fresh-cut vegetables, but also other products from domestic and foreign producers. Consumers’ survey shows that more than half of respondents purchase fresh-cut salad (though most of them are not regular consumers of the product). The most common reason for buying fresh-cut vegetables is the quick preparation. Consumers who do not buy packaged fresh-cut vegetables think that they are too expensive, or they just do not notice them in shops. Only one third of respondents are satisfied with the supply of fresh-cut vegetables, while only 15% of respondents were are satisfied with their quality. Nevertheless, nearly 50% of the respondents were buy fresh-cut packaged vegetables in the future, while further 40% of respondents will maybe buy these products in the future.
