Abstract

The efficiency of ultrafiltration (UF) process of reconstituted whey, de-mineralized by ion exchange (I. E.) or electrodialysis was studied. Reconstituted demineralized whey was concentrated using ultrafiltration about 10 and 20 fold of its initial volume. During ultrafiltration of demineralized whey changes of temeperature, acidity (°SH and pH) and permeate flux were followed and the influence of them on concentration factors of proteins, lactose and ash (as well as calcium), were investigated. Composition of whey protein concentrates (UF-WPC1 and UF-WPC2) achieved by ultrafiltration of reconstituted (I. E.) or (E. D.) demineralized whey (I. E.) or (E. D.) was very similar.
