Variations of copper and iron contents in pasteurized milk during the period 1979 to 1983

Abstract
The changes in Cu and Fe contents of random samples oj market pasteurized milk taken twice monthly were investigated from 1979 to 1983. Yearly means in copper contents were of 5.59 (136), 5.05 (140), 4.85 (144), 6.10 (142) and 5.61 μg/100 g from 1979 to 1983. resp. (in parentheses number of samples). Corresponding data for Fe were 50.37 (144), 52.27 (141), 53.60 (137), 57.22 (140), and 57.51 (141) μg/100 g. The differences between mean concentrations of Cu and Fe determined monthly were mostly significant. Marked fluctuations of Cu and Fe contents can be considered as the conseqiience of an unequal degree of contamination with traces of these elements during milk production and processing.
