Optimization of human milk constitutions by demineralized ultrafiltrated whey

Abstract
This work shows the possibility of application of demineralized whey as valuable raw material for the production of humanized milk. The demineralization of the whey has been achieved by ultrafiltration in the laboratory for milk and milk products. The determination of the optimal recipe was obtained with mathematical model by linear programming. A program in BASIC was developed and calculations were done on ZX Spectrum. The results show the possibility to make a product which is almost the same as human milk. The ration of proteins, fat and carbohidrates, as well as energetic value of the product and the percentages of the most important nutritive components responsible for total energy intake of the product satisfy the standards for such products.
