Used ion exchange resins for the demineralization of sweet whey

Abstract

In this paper, in laboratory scale experiments, to demineralize whey with ion exchange resins and with service flow rate of process 5, 10 and 20 m^3/h/m^3, were investigated. Anion exchange and cation exchange processes were followed by determination of pH value, electrical conductivity end quantity of calcium and total solid of whey. With ion exchange of whey were obtained high demineralization level (x = 94%) and also high decalcification level (x = 96%). Losses of total solid were approximately 12.4% and protein losses were approximately 22%. In this process also decreased about 80% lactic acid from whey.
