Abstract

A review of current progress in the development of gene transfer and molecular cloning systems of lactic acid bacteria is presented. The use of lactic acid bacteria as a hosts for cloning, the construction of cloning vectors and the analysis of gene expression signal is discussed. Some obvious applications of genetic manipulation for improving and stabilizing the desirable characteristics of starter cultures include enhanced lactose metabolism, proteinase activity, bacteriophage resistance, flavor production and production of inhibitory compounds. The use of this technology is destined to improve the way we currently produce fermented dairy products.
