Abstract
The aim of this research was to determine the influence of slaughter weight and gender on slaughter traits and carcass characteristics of
Istrian lambs. A total of 118 Istrian lambs were used in the study, of them 64 males and 54 females. The lambs of Istrian sheep were raised on a family farm Istra County. Investigated Istrian lambs were fed whole sheep milk, good quality meadow hay and a certain amount of concentrates from birth to slaughter.At age between 70 and 80 days lambs were individually weighed and slaughtered. After slaughter and standard procedures of processing, the carcasses and investigated organs were measured. Live slaughter weigth was significantly affected on weights of carcass, stomach and intestines, lungs and heart, spleen and liver, skin and legs (p<0,001). The dressing percentage was not significantly different between weight categories of investigated lambs. Increase in live slaughter weight of lambs was followed by the increase in all the investigated carcass measures of corpulence (p<0,001). Gender did not have significant effect on slaughter traits. Among measures of body development, pelt widht was significantly different between males and females lambs (p<0,05).
