Abstract

With a dynamic controlled storage (DCA = dynamically controlled atmosphere) apple fruits are stored in an atmosphere, which contains the minimum level of oxygen between 0.3 % and 0.6 %. On this way, the respiration rate almost stopped, in order to maintain maximum quality of fruits throughout storage. However, the oxygen concentration should not fall below the anaerobic control point (ACP) to prevent permanent damage of the fruit due to fermentation. The paper represents advantages and disadvantages of three DCA methods that based on the measurement of chlorophyll fluorescence (DCA-CF), calculating the respiratory quotient (RQ-DCA), and measurements of the fermentation products (DCA-FI) compared to ULO. The apples stored in the DCA was significantly higher outer and inner quality than those in the control group of fruits under constant ULO atmosphere.
