Abstract

Present agricultural trends in food production are characterized by rapid changes in eating habits and food products. Mushrooms are, without a doubt, one of the most valuable horticultural foodstuffs. Mushroom cultivation is a one very promising and profitable enterprise that has gained popularity as one of the important parts of the traditional agricultural production. Mushroom production has been known for centuries, as well as their usage for different purposes. The market for mushrooms continues to grow due to the interest in their culinary, nutritional, and health benefits. They also show potential for use in waste management in agriculture, especially in horticulture. The technology of mushroom production has advanced dramatically over the past decade. Our knowledge of mushroom cultivation is currenty limited to 100 species. The most commonly cultivated species are button mushroom (A. bisporus), shii take (L. edodes), oyster mushroom (P. ostreatus), and also some other genera of edible mushrooms including the species of Flammulina, Volvariella, Pholiota, Tremella.
