NUTRITIONAL VALUE OF FIVE TOMATO CULTIVARS GROWN ON ROCKWOOL

Abstract
Quality of fresh tomatoes (Lycopersicon esculentum Mill.) planted on rockwool in hydroponics system is defined by their internal parameters: dry matter and soluble dry matter (°Bx) contents, total acidity (% citric acid), pH, % NaCl and L-ascorbic acid. Research was carried out in 2002 and 2003 on cultivars: Antinea, Belle, E 27.31299, Hallay 344 and Spacestar. Tomato plants were planted into rockwool slabs 100 cm x 15 cm x 7.5 cm. Three plants were planted 33 cm apart into 11.25 L of substrate. The trial was laid out according to the randomized block scheme with four replications, and sampling was carried out during three harvests in: June, July and August. The dry matter content was 4.35% to 5.49% in the first year, and 4.54% to 5.46% in the second year. Soluble dry matter content was 3.0% to 4.2% in the first year, and 3.6% to 4.2% in the second year. Total acidity amounted from 0.16 to 0.46% in the first year and from 0.22% to 0.43% in the second year. pH values ranged from 4.42 to 4.83 in the first year, and from 4.31 to 4.55 in the second year. Salt content ranged from 0.07% to 0.20% in the first year, and from 0.09 to 0.13% in the second year. L-ascorbic acid content ranged from 14.52 to 23.94 mg/100 g fresh raw material in the first year, and from 12.47 to 20.28 mg in the second year. Testing of differences in the basic chemical composition of studied cultivars in the first year revealed significant differences only in their salt contents in the second harvest period (*), while there were no significant differences in the second year.
