Sažetak
Study of technology of white cheese - Travnik type was carried out in traditional conditions from ewe's milk and production from cow's milk in industrial scale. These experiments were accompanied by chemical analyses and economic indicators. According to the results it can he concluded that the technology of cheese production adjusted to the industrial conditions showed positive effects.
