Sažetak

In this study technology of slaughtering in industrial turkey slaughterhouse «Vindon» Slavonski Brod is presented. Veterinary-sanitary examination is described. The inventory of technological mistakes is shown. Manifestation of very low percentage of technological mistakes (although it’s industrial way of processing with big capa-city of slaughtering) in slaughtering process itself, is due to slaughterhouse equipped with most modern equipment which is used in slaughtering and processing of meat. Reasons of low percentage of technological mistakes which appear in the production of turkey meat are also expert skills and conscientiousness of the employees, consistent conducting and control of all veterinary and sanitary regulations and conditions by authorized veterinary inspector, and technological processes by technologist on slaughtering line.
