Quality standards, oyster processing and packaging

Abstract
Food market is susceptible to fluctuations as a consequence of the increasing consumer demand and health risks. Shellfish market position is maintained by implementation of hygienic and sanitary measures in order to protect the consumer. These measures, along with inovations in processing and packaging technology, contribute to better marketing of the shellfish.
