Abstract
17β-estradiol is a sex hormone of the endocrine system present in biological material of farm animals. In residue analyses and detection
of misuse for anabolic purposes, considering the fact that its misuse enables higher production yields in livestock industry, it is vital
to be familiar with physiological levels of this hormone in different tissues and body fluids of animals, as well as of products of animal
origin intended for human consumption. Using a validated ELISA method, in this research there were determined concentrations of
17β-estradiol in meat, unprocessed milk and plasma of non-gravid cows (n=50) from different breeding manners, breed composition
Holstein, Friesian and Simmental, sampled from several farms and abattoirs in the Republic of Croatia. Determined means of
17β-estradiol (±SD) amounted 13±5 ng/kg in meat, 19±13 ng/L in unprocessed milk and 21±11 ng/L in plasma and statistically significant
differences (p<0.05) in the analyzed sample groups were not determined. As in the observed sample there were not determined
levels of 17β-estradiol higher than earlier published ones for untreated animals, they can be considered to be physiological levels of
this hormone in meat, milk and blood of non –gravid cows, excluding thereby the possibility of misusing this substance for anabolic
purposes and making the intake of this hormone in people by meat and milk irrelevant.
