Abstract


The aim of this study was to determine slaughter traits, carcass characteristics, color and water binding capacity of muscle tissue of Krk-breed lambs. The aim was also to examine the effects of slaughter weight and gender on above mentioned traits. For that purpose, 202 of Krk-breed lambs were slaughtered (111 male and 91 female). After slaughter and standard procedures of processing, the carcasses and investigated organs were measured. Indicators of meat color were determined in two muscle regions, M. rectus abdominis (MRA) and M. semitendinosus (MS). The average live slaughter weight was 17.45 kg, carcass weight 9.34 kg and dressing percentage 53.53%. Slaughter traits were not significantly different between male and female lambs (P>0.01). Live slaughter weight significantly affected weights of carcass, stomach and intestines, lungs, heart, spleen, liver and skin (P<0.001). The dressing percentage was not significantly affected by live slaughter weight of lambs (P>0.01). Among measures of body development, carcass length and hind limb length significantly differed between males and females (P<0.01; P<0.001). Increase in live slaughter weight of lambs was followed by the increase in all the investigated carcass measures of corpulence (P<0.001). Gender did not significantly affect measures of corpulence (P>0.01). The color of muscle regions of MRA and MS were not significantly different between males and females (P>0.01). Values L* and b* determined on MS were lower (P<0.01) in heavier lambs, while a* value was not changed with live slaughter weight of lambs. The traits of water binding capacity did not differ significantly between males and females. Also, significant differences in mentioned traits were not determined between lambs of different live slaughter weights.
