Abstract

This paper gives an overview of the substances that represent chemical hazards in meat and meat products, and appear even on farms, due to intentional or unintentional exposure offarm animals, and further during the production process, distribution and storage of products, both in industrial environments and in conditions of the household. Chemical contaminants in meat and meat products include pollutants from the environment, substances with anabolic effect and veterinary drugs and substances resulting from processing and storage of products. As these substances often enter the food chain and in the human body have biological activity, they pose a threat to human health. Many cases of these substances residues presence in the tissues and fluids of farm animals and consequently in meat and meat products have been proven. Because of established numerous toxic effects of substances from the group of chemical contaminants, further studies of their accumulation, elimination and persistence in biological fluids and tissues of farm animals, possible synergistic effects in the body aa also prevention of their occurence in food of animal origin, are needed.
