Abstract

Modern food industry produces food that, due to technological processing, transport, storage and offering to the sale, has to contain food additives. The usage of additives in certain food is determined by functional activity of additives, the added quantity and the usage that is permitted regarding the type of food, and all this has to be in accordance with the strictly determined rules. Emulgatory salts, phosphatic and polyphosphatic additives are the usual additives in meat industry, and their usage often intentionally or unintentionally crosses the border of technological necessity.
